A 90 gram bar of The Whole Truth has 24 grams of dates. That 24 grams contains between 1.5 to 2 grams of fiber.
That same 90 gram bar will give you 540 calories of energy.
A roti will give you almost 2 times more fiber while clocking in 90 calories per roti. Not factoring for any ghee you slather on it.
Pitching the value of fiber contained in the dates used in your chocolate is akin to pitching being cooked by cannibals as an opportunity to have a warm bath. It's not wrong. It's just missing the potential trouble of consuming 540 calories to get less than a roti worth of fiber.
The average dark chocolate bar has a GI of around 23. It can vary. But dates don't really improve that number. It's a function of cocoa butter and cocoa beans. The GI of a food is a function of all the ingredients it contains. And cocoa butter and cocoa really play equally nice with sugar, dates or whatever else is used.
TWT make a good chocolate bar. If you like the taste, take a bite or two. But this effort to hard sell its consumers on the virtue of dates as a sweetener is just contrived and silly.
Some argue even that little fiber entirely disappears during dehydration or preparation of dates.
