Make the request

It’s easy to forget you are paying restaurants to make you food. You are a paying customer. That comes with privilege to make demands and make demands you must.

I order in twice a week from a restaurant called Eden. It’s a very popular joint in South Madras. And the food feels very familiar for me. I’ve been eating there since 1990.

I have made a simple request since 2007. No cream, no oil and no butter in the Palak paneer. And they always oblige. One time they skipped the paneer too :D I added my low fat paneer.

And I pair it with one rumali roti.

That’s it. That’s the meal.

When I call them, they know my voice and automatically recite my order to me.

That’s the power of being a repeat customer who is consistent and reasonable with their demands. The couple of times the cook forgot my request, I called them and requested them to help me out next time. And they did.

Now if enough people did this, the default Palak paneer would be sans oil, ghee and butter. Except for what was needed to temper it or sauté the onions.

You would have to ask for extra cream, butter or oil in your food. And that should be the request that gets people staring at you.
